courgette wraps

In addition to being tasty and light, courgettes are also very versatile vegetables; at home or on your camper van, they are great for quick and flavoursome dishes, like these delicious wraps.This is how.

Ingredients for 4:

Chives (chopped and whole)
1 tablespoonful + a few leaves
Ground black pepper
- to taste
- A few seeds, to taste
Raw ham, finely chopped
- 40 grams
Robiola cream cheese
- 100 grams
- to taste
- 16 slices


Wash and slice the courgettes lengthwise making 16 thin slices (about 2-3 mm thick); sprinkle a little salt, arrange on a flat, slightly inclined surface (to let the water drip away) and stand for 10 minutes. Heat the grill or non-stick pan on the stove and delicately arrange the courgette slices on top. Grill for 2 to 3 minutes on each side and then leave to cool.

In a bowl, mix the robiola, the chives, the ground pepper and the finely chopped raw ham; mix it all and stand in a cool place or the fridge for at least 15 minutes.
When the courgettes are cool, spread the robiola mixture using a spoon or a rounded knife and roll up the courgettes. Use a toothpick to secure the wrap or tie it with a chive leaf.

Stick a few pomegranate seeds on the filling in sight to create an appealing visual contrast. You can now enjoy this recipe on your camper van.
Arrange the wraps on a serving dish with a few rucola or lettuce leaves, sprinkle a few more pomegranate seeds and serve in the dinette of your camper van.
