A CAMPERVAN-PROOF RECIPE PASTA WITH SQUASH, PROSCIUTTO AND SCAMORZA CHEESE
Autumn is the perfect season for travelling by campervan, not just because the days are cooler and still sunny, but also because it renews our kitchen with delicious vegetables, such as squash.

Ingredients for 4 people
• 200 gr of peeled, seeded squash
• 100 gr prosciutto in a single slice
• 50 gr scamorza cheese
• 350 gr short pasta
• 1 white onion
• one tablespoon of extra virgin olive oil
• salt and pepper to taste
To prepare this tasty recipe, start by cutting the squash into slices, then in strips, and finally in dices. Cut the prosciutto into julienne strips and dice the scamorza. Mince the onion, heat the olive oil in a large frying pan and brown the onions. Then add the squash and cook for 10/15 minutes, adding water occasionally to keep it from getting too dry and from burning the onions.
Boil the pasta, drain it and add it to the squash sauce, add the prosciutto and stir to blend the flavours for a few minutes. Immediately add the scamorza, stir quickly and off heat. Stir once more and serve hot and while the cheese is melting, adding a dusting of black pepper.
